Grilled chicken-and-veggie kebab (hence the holes) 😉
Here’s how I prepped the chicken before grilling, and it was delicious:
I laid down a foot-long sheet of foil. In the center I placed one whole fresh chicken breast (boneless, skinless).
Over the chicken breast, I poured a small amount of pineapple juice (probably about 1/2 cup), a generous squeeze of lime juice, and about three or four teaspoons of Kikkoman soy sauce.
Then I wrapped up the foil, put it in an oven-safe dish (because the fluids do leak out) and baked it at 350F for about 35-40 minutes. It was very nice and tender.
That’s it…after that, I just cubed it and put it on the bamboo skewers with the veggies. I always speared a chunk of pineapple on either side of it, to make sure it stayed good and tender.
